Tamales Colados de Yucatán

The tamales called “colados” are unique to the state of Yucatan, the corn dough is strain and cooked to give it a gelatin consistency. They are wrapped in a banana leaf and steam to finish the cooking process. Photos courtesy of Real Life in Merida
